French Flan With Raspberry Coulis Served Up In A New Way!

For dessert tonight, I’m serving flan! Which makes it difficult to explain the picture of the half-eaten flan above. It was so good, I had to! Flan is a classic creamy French dessert usually served in ramekins with a sauce drizzled over it.

I don’t own ramekins and don’t want to buy any, so I had the brilliant idea of serving the flan in some old jars.

I keep almost every jar I can. They never make it to the recycle bin. I wash them, steam off their label and keep them stored away in my secret jar hiding space until some great opportunity like this or French flan comes along!

I am lucky enough to have access to instant packaged “prepare in a few minutes” French desserts like macarons and like flan. For this recipe, I just boiled milk, added some vanilla and the package of flan mix. Easy! Because of that, I do not have a step-by-step recipe for you on how to make flan, but I do hope that before I leave this country, I will have the step-by-step recipe.

This post is more about showcasing the classical French food over here.

I do, I DO, have a step-by-step recipe on how to make the delicious berry coulis to go on top, though. So hold on to your knickers ladies because this is going to be yummy!

So here is goes:

Add around 2 loose cups of frozen berries to a small saucepan. You can use mixed berries or any kind of individual berries, like strawberries or raspberries. I am using a mix. Yum!

Boil the berries on the stove top for 5 minutes or so, until they are thawed out and lose SO much of their liquid. They should almost disintegrate when you put the spoon near them.

Pour the berries into a sieve over a bowl and press them through the sieve with a spoon until every last ounce of liquid is pushed into the bowl and all that is left inside is the pulp. Throw the pulp away.

Now strain the liquidy yumminess again to make sure you get out all of the seeds. Don’t press it through the sieve with a spoon this time but instead shake it to let all the liquid through!

Pour it into a serving cup and refrigerate it until you are going to use it!

Now serve it over the flan. Notice how I left around an inch of space at the top of the jars. This space is specifically designated for the coulis.
