This was one of the quickest, easiest things I have ever made and it came out really perfect! It is super classy and great for a dinner party and I can’t even begin to describe the taste.
I was inspired to make something with coconut milk because I keep seeing Bryan drinking coconut water and I also love coconut oil, both of us because of the immense health benefits of coconut. When I ventured to Hawaii last winter for a holistic health retreat, coconut was one of the main flavours of the dishes and the dishes were all mouth watering and completely organic.
There is one ingredient in these two recipes that you absolutely must pay attention to and that is Walnut Oil. It’s really essential to the nutty taste of both the salmon and the broccoli. It is the same cost as any other oil so I recommend picking it up the next time you grocery shop and having it handy for all your cooking needs. If you don’t want to use walnut oil you can substitute it for another nutty oil or by mixing 1 part sesame oil and 1 part olive oil. Just a warning though, it will not taste exactly the same!
Anyways, without further ado, I’ll start you off with the salmon.
You will need:
- 2 tablespoons of walnut oil
- 200mL coconut milk
- 1 teaspoon of curry powder
- 1/2 teaspoon of salt
- 2 fillets of salmon
For the complimentary side dish which is the broccoli, you will need:
- 1 head of broccoli
- 1/2 head of garlic
- 2 tablespoons of walnut oil
- 1/2 teaspoon of salt
