Rhubarb Compote

If you look down below, you will see that this recipe has only three step-by-step photos. Can you believe I originally had six!! Then I realized that it’s really not important to show a picture of the rhubarb peeling process and the rhubarb being cut because it’s basically one step. And I has similar realizations with the other two photos I nixed.

I had leftover rhubarb from that pie I made the other day so I decided to make this compote which Max’s maman made before. It really yummy and makes for a unique dessert!

I topped it with yogurt in the picture above but really you can just eat it like it’s apple sauce. Apple and rhubarb have a very similar flavour.

Anyways, to make this you will need:

  • 4 stalks of rhubarb
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 2 tablespoons maple syrup
  • 4 tablespoons of brown sugar

Now do this:

 

Easy isn’t it! Just note that if it’s too tart, add a little more sugar. You will never really know with fruit because sometimes they are more sweet, sometimes they are more tart…just check!

P.s. follow this method for basically any type of compote you want…for some fruit (like apples) you don’t even need to add sugar! Berries are a little too liquidy for this but they make a nice coulis!

    I didn’t know that rhubarb was similar to apples. I’ve heard of rhubarb pies but never tasted one. I always thought it was like a celery pie LOL

    @Kayle…me neither, until Max’s mom made it one day. Yum! I was never even exposed to rhubarb before I bought a rhubarb pie one evening three years ago!
