Shortbread Cookies (Le Derniere Recette)

These are one of my all time favourite cookies!

My grandma used to sing us the “shortbread” song allllllll the time while we were growing up. So on the morning when I knew I’d be making these, I belted out the song in the shower and just couldn’t stop. I am sure I sang the shortening bread song the whole day through.

Because this is such a great song, I am going to share the video of a sing-along version of it, before I share my recipe.

Now it’s stuck in my head again.

I finally present to you the recipe!

You will need:Hardly anything! Butter, brown sugar, baking powder, cornstarch and flour.

Begin by adding the flour to a small bowl…

Along with the cornstarch…

And the baking powder…

Stir it all together (then set it aside)…

Ok, now in a separate, bigger bowl, add the butter, and its a lot of freaking butter…

Top that with the sugar…

And cream it together until it looks like this…

Add the entire flour mixture to this creamed concoction…

Stir, stir, stir it together…

The mixture was pretty dry and so I turned it out on to the counter…

And kneaded it into a dough, and then formed it into a ball…

Add some flour to your counter and also to the top of this ball and then roll it out (around a 1/4 inch thick). It does not need to be chilled first and therefore flour is necessary to make sure it doesn’t stick to everything!

I use a glass and cut out little circles…

Set those circles on a baking sheet. By the way, the excess dough can be re-rolled but I only recommend doing this maximum 4 times or the dough is going to be too chewy!

Now bake these suckers at only 300 degrees F for 10-12 minutes.
