Simple Rice Flour Sugar Cookies (wheat and gluten free, oh my!)
I promise I’ll be on all of your blogs by the end of the week but life stuff is calling me right now at home here in Canada and I need to tend to it…a.k.a. finding a full time job, ahhh!
In other news I have some big life changed happening right now that are super exciting but that will be announced on the blog a little later.
For now…
I have recently devolped eczema on my arms and this is the first time I’ve had it for over ten years As a child I had it a bunch. Now when I got home, the first thing I did was scrounge for my nutrition textbooks in the boxes labelled “laura” in my mom’s basement and jackpot! I found them and I’ve been reading all of them non-stop and here are some interesting things I shall disclose with you.
First- Before I left France I was thinking that my eczema was being caused by excess wheat because that was the main staple of my diet over there and never in my life have I eaten as much as I had been eating for that year (wheat causes excess candida in the system which stimulates bacteria growth on the skin and wheat is also hugely intolerant in a lot of people).
Second-My textbooks summarize that 81% of eczema cases are caused by food allergies. The most common food allergies are (in order) milk, eggs, peanuts, wheat and gluten. There is also a huge correlation between chemical allergies and eczema (i.e. shampoo and body wash which I switched to organic upon arrival in this beautiful country).
Third- For one week now I have almost completely elliminated wheat products, plus added the eczema fighting essential fatty acids in high doses of primrose oil and fish oils and I am also on a little bit of a detox (more on that later) aaannnnnnnnddd the eczema has visibly reduced by more than 50% without any steroid creams.
So the reason I am telling you this is because I have a huge desire to experiment with alternative delicious foods that are also EASY and without the need of too many “alternative” groceries. These cookies contain eggs and sugar and such but I would like to start experimenting soon with alternative sugars (never use honey to cook or bake…it turns into a toxic substance upon heating) and egg subsitutes.
So brace yourselves.
The first product I have purchased is rice flour! And I have used it to make pancakes and today, cookies and I cannot even taste the difference between cookies or pancakes made with flour.

You will need:
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1 egg
- 1 1/4 cup rice flour
- 1/2 teaspoon baking soda
